Wontons
Wonton wrappers, ~200
Vegan ground meat, 500g
Nappa cabbage
Mushrooms, 200g
Soy sauce
Shaoxing Cooking Wine
Garlic, minced
Ginger, minced
Sesame Oil
Salt
White Pepper

Soup
No-Chicken Stock
Ginger, minced
Sesame Oil
White pepper powder

Green Onions

Directions
Wontons
- Finely chop the cabbage
- Salt the cabbage and set in a bowl for 20 minutes to allow the salt to draw out the water from the cabbage
- Squeeze the cabbage with something like a lint free towel, a cheese cloth, or similar to squeeze the water from it
- Mince the mushrooms, sauté to release their moisture.
- Combine all but the wrapper in a bowl and mix evenly
- Start wrapping the wontons; can make up to 200-250 wontons
Soup
- Combine all but the green onions in a pot and bring to a boil
- Once boiling, add in your wontons
- Add in green onions just before you stop cooking
- Serve
