Ingredients
Onion
Celery
Bell Pepper
Carrot
1kg tomatoes
White Beans, 2 cans
Oregano
Onion powder
Garlic powder
Basil powder
Bouillon, if desired
200g Dry Pasta, such as ditalini, stelline, or orecchiette
Parmesan, non-dairy
Basil, fresh
Directions
- Chop onion, celery, bell pepper, tomatoes, and carrot. Add to large soup pot
- Rinse beans, and add to pot
- Add spices
- Add enough water for it to be a soup
- Cook for about 45 minutes
- Add pasta and cook about 12 minutes, or until pasta is done
- Top with shredded parmesan
- Garnish with basil
